  1. Not a pumpkin, but we often roast ad eat an acorn squash during the fall. We halve it, roast it and stuff it with wilted spinach or kale, sausage, and goat or blue cheese, and finish it under the broiler with a breadcrumb top. It’s a perfect meal for two! That being said – I bet kids would totally love the novelty of eating a meal out of a whole pumpkin!
